Castella: Castelrosso cream cheese. It can be used as a fondue, a sauce for pasta, rice, savoury pies, or can be spread on canapés, used as a filling for vol au vents, or served with cold meats (speck, bresaola) or boiled vegetables (potatoes, beans etc.). It should be consumed hot.
