Toma Valle Elvo

Toma Valle Elvo is a ripe semi-soft cheese made with cow’s milk from at least two consecutive milkings, semi-skimmed and pasteurized. The flavour is intense and harmonious. This cheese was carried by mule or by carriers from the huts in the pastures to Sordevolo, the chief village in the valley. The cheese was ripened in the underground cellars there.
